A March 10, 1992, the first local restaurant Ceviche del Rey in Canton opened SantoDomingo Heredia - Costa Rica revealing the authentic and traditional Peruvian cuisine. The married couple Northman and Rosa began with great enthusiasm, which eventually became the project of their lives, a restaurant aimed to publicize and share the variety of traditional Peruvian dishes, specializing in ceviche. Achieving introduced into the taste and preference of the palate of Costa Ricans and foreigners, and thanks to them getting two awards at the international food festival in Madrid - Spain 2001 and trophy quality in France 2002. His accomplishments have transcended so that count with a chain of restaurants and franchises both nationally and internationally.
